Beef Chili With Beans

Ingredients

  • 2 tbsp oil
  • 1 kg minced beef
  • 1 medium onion, finely diced
  • 3 cloves garlic, finely chopped
  • 3 tbsp tomato paste
  • 400 ml tomato juice
  • 425 ml chopped tomatoes
  • 425 ml tin of kidney beans, drained and rinsed
  • 425 ml tin of baked beans
  • 425 ml tin of corn, drained
  • 6 tbsp lactose free sour cream
  • 8 None red chillies, finely sliced
  • None None chopped rosemary for garnish

Instructions

  1. Heat oil in a nonstick frying pan and brown the ground beef. Season with salt and pepper then add the onion and garlic and cook for 2 mins. Stir in the tomato paste and cook for 2 mins. Add the tomato juice and chopped tomatoes, stir and simmer for 2 more mins. Add the kidney beans, baked beans and corn, season to taste with salt and pepper and simmer for a few more mins until heated through. Serve with sour cream and garnish with the sliced chili peppers and chopped rosemary.
