Beef Curry

Ingredients

  • 1 lb. round
  • 1/4 cup shortening or oil or margarine
  • 2 cups onion
  • 1/2 minced garlic clove
  • 1 tablespoon curry powder
  • 1 cup boiling water
  • 1/2 cup tomato juice

Instructions

  1. Cut meat into bite-size cubes and dredge through flour, salt, and pepper.
  2. Brown the meat in oil.
  3. Add onion and garlic and sauté until browned.
  4. Transfer to crock-pot with remaining ingredients: boiling water and tomato juice.
  5. Cook on low for about 4 hours while you are at work.
  6. Serve over rice with diced hard-boiled eggs, diced cucumber, crumbled bacon, raisins, diced apples, and chopped onion.
