Ingredients

  • 28-32 oz. can whole tomatoes with juice, chopped
  • 1 large onion, chopped
  • Zest of 1 lemon, minced
  • 1/2 cup sugar
  • 1/2 cup cider vinegar
  • 1/3 cup dried currants
  • 1 1/2 teaspoons mustard seeds
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon allspice
  • 1/4 teaspoon cinnamon

Instructions

  1. Combine all ingredients in a saucepan.
  2. Cook over moderate heat for 30 minutes, stirring occasionally.
  3. Reduce heat to low and simmer an additional 30 minutes, stirring occasionally, until thickened and reduced to about 2 1/2 cups.
