Beef Egg Drop Soup

Ingredients

  • 1 lb lean beef, very thinly sliced
  • 1 tbsp light soy sauce
  • 1 tbsp peanut oil
  • 3 cups beef or chicken stock
  • 3 None eggs, lightly beaten
  • 5 oz baby spinach
  • 5.5 oz bean sprouts

Instructions

  1. Toss together beef and soy sauce.
  2. In a wok or frying pan, heat oil over high heat. Stir-fry beef for 3 mins, until just cooked. Set aside.
  3. In a large saucepan, bring stock and 3 cups water to a boil. Stir in beaten eggs. Add beef, spinach and bean sprouts. Bring to a boil and season. Serve.
