Beef Enchilada

Instructions
- Brown onions and beef in oil and set aside.
- Heat 3 tablespoons of oil and flour, stirring until browned.
- Slowly add chili powder mixture, stirring until thickened.
- Add tomato sauce, salt and pepper and simmer about 5 minutes.
- Soften tortillas by dipping in enough hot oil to cover and quickly remove from oil and drain.
- Place some of meat mixture, cheese and diced onions on tortilla.
- Place seam side down in baking dish.
- Cover with remaining sauce and remaining meat, cheese and onion.
- Bake at 350° for 30 minutes or until hot and bubbly.
