Beef Enchilada

Ingredients

  • 1 onion, diced
  • 1 1/2 to 2 lb. ground beef
  • cooking oil
  • 2 c. water
  • 2 Tbsp. chili powder
  • 2 Tbsp. flour
  • 1 (16 oz.) can tomato sauce
  • salt and pepper to taste
  • 10 to 12 corn tortillas
  • 1 lb. cheese, grated

Instructions

  1. Brown onions and beef in oil and set aside.
  2. Heat 3 tablespoons of oil and flour, stirring until browned.
  3. Slowly add chili powder mixture, stirring until thickened.
  4. Add tomato sauce, salt and pepper and simmer about 5 minutes.
  5. Soften tortillas by dipping in enough hot oil to cover and quickly remove from oil and drain.
  6. Place some of meat mixture, cheese and diced onions on tortilla.
  7. Place seam side down in baking dish.
  8. Cover with remaining sauce and remaining meat, cheese and onion.
  9. Bake at 350° for 30 minutes or until hot and bubbly.
