Ingredients

  • 10 strips bacon, cut into thirds
  • 3 medium or small onions
  • 1 1/4 to 1 1/2 lb beef liver
  • 1 can mushrooms (optional)

Instructions

  1. Put 3 tablespoons margarine or butter and onions in the pan. Fry until tender, about 5 minutes.
  2. Remove onions from the pan and set aside.
  3. Add 1/2 cup shortening to the pan and melt.
  4. Coat beef liver with flour and fry until browned, about 2 or 3 minutes on each side.
  5. Remove liver from the pan and set aside.
  6. Add 1 cup cold water and canned mushrooms to the pan and cook for 1 minute.
  7. Add bacon and onions back to the pan.
  8. Cook all together for a few minutes to combine flavors.
  9. Place the cooked liver on top of the onion mixture.
  10. Cover and simmer on low heat for 30 minutes, stirring every 5 minutes.
