Beef Liver

- Put 3 tablespoons margarine or butter and onions in the pan. Fry until tender, about 5 minutes.
- Remove onions from the pan and set aside.
- Add 1/2 cup shortening to the pan and melt.
- Coat beef liver with flour and fry until browned, about 2 or 3 minutes on each side.
- Remove liver from the pan and set aside.
- Add 1 cup cold water and canned mushrooms to the pan and cook for 1 minute.
- Add bacon and onions back to the pan.
- Cook all together for a few minutes to combine flavors.
- Place the cooked liver on top of the onion mixture.
- Cover and simmer on low heat for 30 minutes, stirring every 5 minutes.
