Ingredients

  • 1/4 cup olive oil
  • 1 pound stew beef
  • 1 pound ground beef
  • 2 cloves garlic
  • 1 small head cabbage
  • 3 carrots
  • 4 ribs celery
  • 2 turnips
  • 1 large onion
  • 48 ounces can V-8 juice
  • 1/2 cup red wine
  • 1/2 cup red wine vinegar
  • 1 cup beef bouillon
  • salt and pepper
  • 2 bay leaves

Instructions

  1. Brown stew beef in a skillet in the olive oil. Add garlic and sauté for a couple of minutes longer. Pour into a large crock pot.
  2. Brown ground beef in the skillet. Drain and add to the crock pot.
  3. Add cabbage, carrots, celery, turnips, and onions to the crock pot.
  4. Pour on the V-8 juice, then add red wine and red wine vinegar.
  5. Add enough beef bouillon to cover the ingredients.
  6. Season with salt and pepper and top with bay leaves.
  7. Cook on high for 4 hours.
  8. Remove bay leaves, then add zucchini and cook for another hour.
  9. Add barley and cook for 1 more hour.
