Beef Parmigiana features tender cubed steak topped with savory tomato sauce and melted cheese, perfect for comforting family dinners or casual gatherings.

Ingredients

  • 1 1/2 lb. cubed steak
  • 1/3 cup fine dry bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 to 3 tablespoons vegetable oil
  • 1 medium chopped onion
  • 6 oz. can tomato paste
  • 2 cups water
  • 1/2 teaspoon oregano
  • Salt and pepper

Instructions

  1. Combine bread crumbs and grated Parmesan cheese.
  2. Dip steak in beaten egg, then in bread crumb mixture.
  3. Brown steak in vegetable oil.
  4. Remove from skillet and place in a lightly greased baking dish.
  5. Add chopped onion to pan drippings and sauté until done.
  6. Add tomato paste, water, oregano, salt, and pepper; bring to a boil.
  7. Cook uncovered for 5 minutes, then pour sauce over steak.
  8. Cover with foil and bake at 350°F for 50 minutes.
  9. Remove from oven, top with cheese, and bake until cheese melts.
