Hearty beef poppie features tender beef and flavorful broth encased in a homemade dough, perfect for comforting family dinners or gatherings with rich, savory flavors.

Ingredients

  • 2 to 3 lb beef stew meat or rump roast
  • 2 to 3 cans beef broth
  • 4 cups flour
  • 2 teaspoons salt
  • 2 eggs

Instructions

  1. Boil beef and beef broth until beef is done.
  2. Remove 1 cup of broth and the beef from the pot.
  3. Mix flour, salt, and eggs in a bowl.
  4. Gradually stir in the reserved broth into the flour mixture.
  5. Add more broth as needed to reach the consistency of pie dough.
  6. Roll out the dough on a floured surface.
  7. Cut the dough into 1 to 2-inch squares.
  8. Drop the squares into the boiling beef broth.
  9. Stir after all squares are added.
  10. Reduce heat to a slow simmer.
  11. Let cook for 30 minutes.
  12. Add cooked beef to the pot as desired during cooking.
  13. Cook until the poppie is tender and done.
