Ingredients

  • 1 1/2 lb. chuck beef
  • 1 bay leaf
  • 1 tsp. salt
  • 1 tsp. cumin
  • 1/2 tsp. pepper
  • 1 large garlic clove
  • 1 medium onion
  • 3/4 tsp. oregano
  • 2 large potatoes
  • 2 large carrots
  • 2 large celery stalks
  • 2 Tbsp. tomato paste
  • 2 large ears corn
  • 1 c. frozen peas
  • 2 1/2 c. beef broth

Instructions

  1. Cook the cubed beef with bay leaf, salt, cumin, pepper, garlic, and onion until the meat is tender.
  2. Add potatoes, carrots, celery, and tomato paste to the stew.
  3. Cook for 20 minutes to allow flavors to meld.
  4. Add peas, corn on the cob, and oregano to the stew.
  5. Cook for an additional 5 minutes before serving.
