Ingredients

  • 1 lb. round steak
  • 1/2 cup shredded carrots
  • 2 oz. grated Swiss cheese
  • 1 (10 oz.) package spinach
  • 1 small onion
  • pinch crushed garlic

Instructions

  1. Saute small onion until cooked, then drain and set aside.
  2. Add shredded carrots and spinach to the onions and cook together.
  3. Cut the round steak into portions suitable for rolling.
  4. Place the cooked vegetable mixture on each piece of beef, then top with grated Swiss cheese.
  5. Roll up each beef piece and secure with a toothpick.
  6. Saute the rolled beef in butter until well browned.
  7. Prepare gravy as desired.
  8. Serve the beef roll-ups with gravy over noodles or rice.
