  • 5 to 6 lb. beef tenderloin, trimmed
  • 3 Tbsp. Dijon mustard
  • 1 Tbsp. dried sage
  • 1/2 Tbsp. green peppercorns, drained
  • 1/2 Tbsp. white peppercorns, ground
  • 1/2 Tbsp. black peppercorns, ground
  • 2 Tbsp. softened butter

Instructions

  1. Cut the tenderloin lengthwise to within 1/2 inch of the opposite edge, leaving the edge intact.
  2. Open the tenderloin out flat.
  3. Place heavy-duty plastic wrap on the tenderloin and pound the meat to flatten it.
  4. Remove the plastic wrap and spread Dijon mustard over the tenderloin.
  5. Sprinkle dried sage, drained green peppercorns, and 1/2 tablespoon each of ground white and black peppercorns.
  6. Fold the tenderloin back over and tie with string at 3-inch intervals.
  7. Spread softened butter on top of the tenderloin and sprinkle the remaining peppercorns.
  8. Place the prepared tenderloin on a rack and bake at 425°F for 30 to 45 minutes, or until the desired doneness is reached.
  9. Alternatively, cook on a gas grill.

Tips & Substitutions

For a more intense flavor, marinate the beef tenderloin in Dijon mustard and spices overnight. If you can’t find green peppercorns, use more black peppercorns instead. To achieve a perfect sear, ensure the grill or pan is preheated adequately before cooking. Consider serving with a side of roasted vegetables or a light salad for balance.

Serving Suggestions

Slice the beef tenderloin against the grain for serving. It pairs beautifully with a creamy horseradish sauce or a red wine reduction. Serve alongside garlic mashed potatoes or roasted asparagus for a complete meal. This dish also complements well with a fresh arugula salad, making it a versatile choice for entertaining.

Storage & Reheating

Leftover beef tenderloin can be stored in an airtight container in the refrigerator for up to 3 days. For best quality, reheat in the oven at 300°F until warmed through, or slice thinly and serve cold in sandwiches. Avoid microwaving as it can make the meat tough.

Frequently Asked Questions

Can I use a different cut of beef for this recipe?

While beef tenderloin is ideal for its tenderness, you can substitute with a flank steak or sirloin, though cooking times may vary. Ensure to adjust the cooking method accordingly to avoid overcooking these cuts.

What should I serve with beef tenderloin?

Beef tenderloin pairs well with rich sides like creamy mashed potatoes or a light salad. Consider serving it with a side of sautéed green beans or a baked potato to round out the meal. For a successful dinner, browse more American recipes for inspiration.

How can I tell when the beef tenderloin is cooked to my liking?

Using a meat thermometer is the best way to check doneness. Aim for 130°F for medium-rare, 140°F for medium, and 150°F for medium-well. Remember to let the meat rest for at least 10 minutes after cooking, as it will continue to cook slightly and juices will redistribute.
