A hearty beef stew simmered with green chili sauce, tomatoes, and black olives, offering bold flavors perfect for comforting family meals or casual gatherings.

Ingredients

  • 2 lb stew meat
  • 1 large can green chili sauce
  • 1 can chopped black olives
  • 1 can stewed tomatoes
  • 1 Tbsp chili powder
  • 1 onion
  • 2 cloves garlic
  • salt

Instructions

  1. Cut stew meat into small chunks.
  2. Brown the meat in a skillet.
  3. Add chopped onion and crushed garlic to the skillet and sauté until fragrant.
  4. Combine all ingredients: browned meat, green chili sauce, chopped black olives, stewed tomatoes, chili powder, onion, and garlic in a pot or slow cooker.
  5. Let simmer on low heat for 4 to 5 hours, or cook in a crock-pot.
  6. Use a hand potato masher to mash the cooked verde, shredding the meat and tomatoes.
  7. Serve with flour tortillas and rice topped with sour cream or on baked potatoes with shredded Cheddar cheese.
