Ingredients

  • 1 lb. beef stew meat
  • 2 tsp. oil
  • 6 cups beef broth
  • 1 package egg noodles
  • 1 can cream of mushroom soup
  • 1 can sliced mushrooms
  • 1 cup reduced fat sour cream

Instructions

  1. Heat oil in a Dutch oven over medium heat.
  2. Add beef stew meat and brown on all sides.
  3. Pour in beef broth and bring to a boil.
  4. Reduce heat to simmer, cover, and cook until meat is tender, about 30 minutes.
  5. Bring the soup back to a boil.
  6. Add egg noodles and cook until tender, about 10 minutes.
  7. Stir in cream of mushroom soup, drained sliced mushrooms, and reduced-fat sour cream.
  8. Cook for an additional 2-3 minutes until heated through and well combined.
