Beer N' Cheese

Ingredients

  • 3/4 lb shredded Cheddar cheese
  • 3 oz cream cheese
  • 2 Tbsp butter
  • 1/3 cup lite beer
  • 1 tsp dry mustard
  • 1/4 cup dried parsley

Instructions

  1. Beat the shredded Cheddar cheese, cream cheese, and butter in a food processor or mixer until smooth.
  2. Gradually add the lite beer and dry mustard, mixing well.
  3. Refrigerate until the mixture is stiff enough to be rolled into a ball, approximately 2 hours.
  4. In the meantime, enjoy the rest of the beer.
  5. Shape the cheese mixture into a ball and place it in a bowl.
  6. Cover and refrigerate until just before serving.
  7. Chop the dried parsley very fine and roll the cheese ball in the parsley.
  8. Serve with crackers or French bread.
