- Beat the shredded Cheddar cheese, cream cheese, and butter in a food processor or mixer until smooth.
- Gradually add the lite beer and dry mustard, mixing well.
- Refrigerate until the mixture is stiff enough to be rolled into a ball, approximately 2 hours.
- In the meantime, enjoy the rest of the beer.
- Shape the cheese mixture into a ball and place it in a bowl.
- Cover and refrigerate until just before serving.
- Chop the dried parsley very fine and roll the cheese ball in the parsley.
- Serve with crackers or French bread.
