Ingredients

  • 1 bn beets peeled, halved, sliced
  • 1 x beet greens washed and finely minced
  • 3 stalk celery, diced
  • 1 Tbsp. lemon juice salt & pepper to taste
  • 1 lrg onion, diced
  • 4 x carrots, sliced
  • 1 Tbsp. vinegar
  • 1 Tbsp. horseradish

Instructions

  1. Put vegetables in a large pot with water to cover.
  2. Add in remaining ingredients and mix thoroughly.
  3. Simmer 2 - 2 1/2 hrs, till beets and carrots are tender.
