Ingredients

  • 8 lb. beets, raw, peeled and sliced
  • 6 lb. sugar
  • 3 oranges, sliced with peel
  • 1 lb. raisins, tied in a bag
  • 1 pkg. yeast

Instructions

  1. Boil the beets for 30 minutes in 3 quarts of water.
  2. Strain the beets and add enough water to make 1 1/2 gallons of liquid.
  3. Add the remaining ingredients: sugar, sliced oranges with peel, tied raisins, and yeast.
  4. Let the mixture stand for 9 to 12 days, then strain it.
  5. Allow the wine to stand until it becomes clear.
  6. Pour the wine into bottles and seal them.

Tips & Substitutions

For a smoother wine, consider using a potato masher to break down the beets before boiling. If you prefer a different flavor profile, you can substitute the raisins with dried figs or apricots. Ensure your fermentation vessel is sanitized to prevent unwanted bacteria. Monitor the fermentation process closely, as temperature and yeast activity can vary.

Serving Suggestions

Serve the beet wine slightly chilled in elegant glasses to enhance its vibrant color. It pairs beautifully with hearty dishes like Beef Tapa or a refreshing Crispy Radish Salad. Consider offering it alongside a cheese platter or a selection of nuts to complement its sweet and earthy flavors.

Storage & Reheating

Once bottled, store the beet wine in a cool, dark place to allow it to age gracefully. If you have leftover wine, ensure the bottles are tightly sealed to prevent oxidation. For best flavor, consume within a year. If you prefer it chilled, refrigerate before serving, but avoid freezing as it can alter the taste.

Frequently Asked Questions

How long does the fermentation process take?

The fermentation process typically takes between 9 to 12 days. During this time, it's essential to monitor the mixture for any signs of bubbling, which indicates active fermentation. Once the bubbling subsides, it’s a good indication that it's ready to be strained and clarified.

Can I use different types of sugar?

Yes, you can experiment with different types of sugar in this recipe. While granulated sugar is standard, brown sugar or honey can introduce unique flavors. Just keep in mind that different sugars may affect the fermentation process and final taste.

What should I do if the wine doesn't clear?

If your wine doesn't clear after a few weeks, you can try racking it into a clean container to separate it from the sediment. Additionally, using a fining agent like bentonite can help clarify the wine. Patience is key, as some wines may take longer to achieve clarity.
