Ingredients

  • 1/2 green bell pepper
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 3/4 cup shredded reduced fat Monterey Jack cheese
  • 2 tablespoons chopped ripe olives
  • 1/4 teaspoon crushed red pepper

Instructions

  1. Cut bell pepper strips crosswise into halves.
  2. Arrange the bell pepper halves close together in an ungreased broiler-proof pie pan or round pan.
  3. Sprinkle the peppers with shredded cheese, chopped olives, and crushed red pepper.
  4. Set the oven control to broil.
  5. Broil the peppers with the tops 3 to 4 inches from the heat for about 3 minutes or until the cheese is melted.
