Ingredients

  • 1 c. yellow corn meal
  • 1/2 c. flour
  • 1 Tbsp. baking powder
  • 1/4 c. corn oil
  • 1 1/2 c. milk
  • 1/2 tsp. salt
  • 2 eggs
  • 2 Tbsp. mayonnaise
  • 1 tsp. sugar

Instructions

  1. Stir together the cornmeal, flour, sugar, corn oil, milk, and salt until well mixed.
  2. Add the eggs, mayonnaise, and baking powder to the mixture and stir well.
  3. Pour into a preheated 400°F oven in a cornstick pan or in a 350°F oven in an 11 x 15-inch pan.
  4. Bake for approximately 10 to 15 minutes until golden and cooked through.
