Ingredients

  • 1 lb. ground elk
  • 2 eggs
  • 3/4 tsp. Italian seasoning
  • 1 tsp. Parmesan cheese
  • 2 slices bread
  • salt to taste
  • 1/4 tsp. pepper
  • Italian bread crumbs

Instructions

  1. Mix elk meat, eggs, Italian seasoning, Parmesan cheese, wet bread (wring out excess water), salt, and pepper in a medium bowl.
  2. Add enough bread crumbs to the mixture to make it stay together.
  3. Form the mixture into small meatballs.
  4. Slowly fry the meatballs until browned.
