Best Nachos Ever

Ingredients

  • 2 to 3 c. cooked refried black beans
  • 1 1/2 c. cooked brown rice
  • 1 c. shredded Monterey Jack cheese
  • 1 c. shredded Cheddar cheese
  • 1 can sliced black olives
  • 1 to 2 avocados
  • lots of tortilla chips
  • your favorite salsa

Instructions

  1. Mix rice and beans together; spread along the bottom of a 9 x 13-inch Pyrex pan.
  2. Sprinkle mixture with Jack cheese.
  3. Cover with tortilla chips.
  4. Sprinkle chips with Cheddar cheese.
  5. Top cheese with olives.
  6. Bake in oven at 350° until all is heated.
  7. Mash avocados and serve with salsa.
  8. Can use refried beans instead of black beans (optional).
