Ingredients

  • 8 oz. linguini pasta
  • 2 Tbsp. olive oil
  • 1 large zucchini (about 1 lb.), diced
  • 1 medium onion, thinly sliced
  • 1/4 cup chopped jalapeno peppers
  • 1 large garlic clove, crushed
  • Grated Parmesan cheese (optional)
  • 1 (14 1/2 oz.) can chopped tomatoes, undrained
  • 1/2 tsp. oregano
  • 1/4 cup pitted black olives, chopped
  • 1/2 tsp. salt

Instructions

  1. Prepare pasta according to package instructions and set aside.
  2. In a 12-inch skillet, heat olive oil over medium heat.
  3. Saute zucchini, onion, jalapeno peppers, and garlic for 5 minutes or until vegetables are tender-crisp, stirring occasionally.
  4. Add chopped tomatoes, oregano, chopped black olives, and salt; heat to a boil.
  5. Reduce heat to low; simmer uncovered for about 10 minutes, stirring frequently, until mixture thickens.
  6. Toss the cooked pasta with the vegetable mixture.
  7. Serve with grated Parmesan cheese, if desired.
