Ingredients
- 8 oz. linguini pasta ⓘ
- 2 Tbsp. olive oil ⓘ
- 1 large zucchini (about 1 lb.), diced ⓘ
- 1 medium onion, thinly sliced ⓘ
- 1/4 cup chopped jalapeno peppers ⓘ
- 1 large garlic clove, crushed
- Grated Parmesan cheese (optional) ⓘ
- 1 (14 1/2 oz.) can chopped tomatoes, undrained ⓘ
- 1/2 tsp. oregano ⓘ
- 1/4 cup pitted black olives, chopped ⓘ
- 1/2 tsp. salt ⓘ
Instructions
- Prepare pasta according to package instructions and set aside.
- In a 12-inch skillet, heat olive oil over medium heat.
- Saute zucchini, onion, jalapeno peppers, and garlic for 5 minutes or until vegetables are tender-crisp, stirring occasionally.
- Add chopped tomatoes, oregano, chopped black olives, and salt; heat to a boil.
- Reduce heat to low; simmer uncovered for about 10 minutes, stirring frequently, until mixture thickens.
- Toss the cooked pasta with the vegetable mixture.
- Serve with grated Parmesan cheese, if desired.
