  • 1 stack Ritz crackers
  • 1 Tbsp diced onion
  • 1 stick butter
  • Zesty Italian dressing
  • 2 tsp Parmesan cheese
  • shredded Cheddar cheese

  2. Cut out stems and dice them finely.
  3. Crush Ritz crackers to make crumbs.
  4. In a medium frying pan, saute onions and diced stems in 2 tablespoons of butter until cooked.
  5. Add the butter and cook until melted.
  6. Pour over cracker crumbs and toss to combine.
  7. Add Parmesan cheese and 1/3 cup Zesty Italian dressing and mix until a soft stuffing forms.
  8. Add more Italian dressing if needed to reach desired consistency.
  9. Stuff each mushroom cap with the filling and place on a baking sheet.
  10. Sprinkle shredded Cheddar cheese on top.
  11. Bake in a 350°F oven for 15 minutes.
