Ingredients

  • 1 lb Camellia pinto beans
  • 12 cups water
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 3 strips bacon, crisp fried
  • 4 drops Tabasco sauce
  • salt and pepper to taste

Instructions

  1. Rinse the pinto beans thoroughly.
  2. Cover the beans with 12 cups of water and bring to a boil, then boil for 15 minutes.
  3. Drain the beans and refill with fresh water, then bring to a boil again.
  4. Saute chopped onion and minced garlic until wilted.
  5. Add the sautéed onions and garlic to the boiling beans.
  6. Cook the beans with the onions and garlic on medium heat for 1 hour and 45 minutes.
  7. Add salt and pepper to taste.
  8. Stir in 4 drops of Tabasco sauce and add the crisp-fried bacon strips.
  9. Cook everything together for another 15 minutes or until done.
