Ingredients

  • 1 (16 oz.) can pink salmon, drained and flaked
  • 1 (8 oz.) package cream cheese
  • 1 Tbsp. lemon juice
  • 2 tsp. grated onion
  • 1 tsp. white horseradish
  • 1/4 tsp. salt
  • 1/4 tsp. liquid smoke
  • 1/2 cup chopped pecans
  • 3 Tbsp. chopped parsley
  • celery leaves and olives for garnish

Instructions

  1. Mix salmon, cream cheese, lemon juice, grated onion, white horseradish, salt, and liquid smoke until well combined.
  2. Cover and chill in the refrigerator for several hours to allow flavors to meld.
  3. In a bowl, combine chopped pecans and chopped parsley.
  4. Shape the chilled salmon mixture into a fish shape on wax paper.
  5. Roll the shaped salmon in the nut and parsley mixture until fully coated.
  6. Garnish each piece with a green olive for the eye and celery leaves for the fins.
  7. Serve chilled with cocktail rye or your favorite crackers.
