Ingredients

  • 3 cups dry green split peas
  • 5 cups water
  • 1 bay leaf
  • 2 teaspoons salt
  • 2 tablespoons oil
  • 1 cup minced onion
  • 3 cloves crushed garlic
  • 1 cup minced celery
  • 1 small, thinly sliced potato
  • 2 cups sliced carrots
  • 1/4 cup dry red wine
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon thyme
  • few drops sesame oil
  • 3 tablespoons vinegar
  • 1 cup chopped tomatoes
  • 1/4 cup freshly chopped parsley

Instructions

  1. In a large pot, combine dry green split peas, water, bay leaf, and salt; simmer, covered, for 3 to 4 hours.
  2. Remove the bay leaf from the soup.
  3. Sauté minced onion, crushed garlic, minced celery, sliced potato, and sliced carrots in oil.
  4. Add a little water if necessary to steam the vegetables until tender.
  5. Add the cooked vegetables to the soup and continue simmering.
  6. About 5 minutes before serving, add red wine, dry mustard, thyme, and a few drops of sesame oil.
  7. Just before serving, stir in vinegar, chopped tomatoes, and chopped parsley.
