Ingredients

  • 1 1/2 tsp. whole cloves
  • 1 1/2 tsp. broken stick cinnamon
  • 1 tsp. celery seed
  • 1 c. white vinegar
  • 8 lb. ripe tomatoes
  • 1 Tbsp. chopped onion
  • 1/4 tsp. red pepper
  • 1 c. sugar
  • 4 tsp. salt

Instructions

  1. Measure spices into a small saucepan; add vinegar.
  2. Cover; heat to a boil.
  3. Remove from heat; let stand while you prepare tomato mixture.
  4. The spices steep in vinegar, keeping the catsup rich red in color.
  5. Wash tomatoes.
  6. Mash the tomatoes in a large pan.
  7. Add chopped onion and red pepper to the mashed tomatoes.
  8. Heat to a boil; cook for 15 minutes, stirring occasionally.
  9. Put the cooked tomatoes through a food mill or coarse sieve.
  10. Add sugar to the tomato juice.
  11. Heat to a boil, then simmer briskly until reduced by half, about 45 to 60 minutes.
  12. Strain the spiced vinegar mixture into the tomato mixture; discard spices.
  13. Add salt.
  14. Simmer the combined mixture for about 30 minutes, stirring often.
  15. Fill hot, sterilized jars; seal at once.
