Ingredients

  • 12 tortillas (white corn preferably)
  • 1 can mushroom soup
  • 1 pint sour cream
  • 1/4 cup chopped onion
  • 1 can black olives, chopped finely
  • 2 cups Colby cheese, grated

Instructions

  1. Combine mushroom soup and sour cream in a flat bowl large enough to hold a flat corn tortilla.
  2. Combine chopped olives, chopped onion, and grated Colby cheese.
  3. Spray a 9 x 13-inch pan with Pam and pour enough sour cream mixture to sparsely cover the bottom.
  4. Fry each tortilla until soft, then blot on paper towels.
  5. Dip each tortilla, both sides, in the soup and sour cream mixture, then place 2 tablespoons of the olive, onion, and cheese mixture in the middle.
  6. Roll the tortilla and place it seam-side down in the prepared pan.
  7. Repeat with remaining tortillas.
  8. Bake at 350°F (175°C) until bubbling, about 30 minutes.

Tips & Substitutions

For a creamier texture, consider using a blend of cream cheese and sour cream. You can substitute the Colby cheese with Monterey Jack or cheddar for a different flavor profile. If you prefer a spicier kick, add some diced jalapeños to the olive and onion mixture. Frying the tortillas ensures they stay intact during baking, enhancing the overall texture of the casserole.

Serving Suggestions

Serve the taco casserole with a side of fresh guacamole or a crisp green salad for a refreshing contrast. It pairs beautifully with Cheese And Sour Cream Burritos for a complete meal. You can also top it with fresh cilantro, diced tomatoes, or a dollop of salsa before serving to enhance the flavors.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to three days. To reheat, cover the casserole with foil and warm it in the oven at 350°F (175°C) for about 20 minutes, or until heated through. You can also microwave individual portions, but be careful not to overheat, as the tortillas can become chewy.
