Ingredients

  • 1 gallon water
  • 1 tablespoon chicken base seasoning or 4 chicken bouillon
  • 2 cans Cheddar cheese soup
  • 1 1/2 cups flour
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1 pound margarine
  • 2 cups half and half cream
  • 2 1/2 pounds potatoes

Instructions

  1. Bring 1 gallon of water to a boil in a large pot.
  2. Add 2 1/2 pounds of cubed potatoes, 1 tablespoon of chicken base seasoning or 4 chicken bouillon, 1 teaspoon of pepper, and 1 teaspoon of salt.
  3. Cook until the potatoes are half tender.
  4. Add 2 cans of Cheddar cheese soup and simmer for 10 minutes.
  5. While simmering, melt 1 pound of margarine in a separate pan.
  6. Add 1 1/2 cups of flour to the melted margarine to make a paste (roux).
  7. Add the roux to the potatoes and soup mixture, stirring well.
  8. Add 2 cups of half and half cream and heat to serving temperature, ensuring it does not boil.
