Better Brussels Sprouts

Ingredients

  • 3 to 3 1/2 lb. Brussels sprouts
  • 2 1/2 Tbsp. butter
  • 2 1/2 Tbsp. olive oil
  • 8 cloves garlic
  • 1 c. chicken broth
  • salt to taste
  • pepper to taste

Instructions

  1. Cut off stem ends and score a small 'X' at the bottom of each Brussels sprout.
  2. Over low heat, melt 2 1/2 tablespoons of butter with 2 1/2 tablespoons of olive oil in a large pot.
  3. Add the garlic cloves; cook for 2 to 3 minutes until fragrant.
  4. Add the prepared Brussels sprouts; toss to coat with the butter mixture.
  5. Pour in 1 cup of chicken broth; season with salt and pepper to taste.
  6. Cover the pot and cook over low heat for 10 to 15 minutes until sprouts are tender but not overcooked.
  7. Drain the sprouts and return them to the pot.
  8. Before serving, toss the sprouts with melted butter and chopped parsley.
