- In a large mixing bowl, mix together cocoa, sugars, salt, flour, espresso powder, and chocolate chips. Add the eggs, oil and coffee. Mix until just smooth.
- Spoon the mixture into a lightly greased 8 x 8" square pan, smooth the top. Bake the brownies at 350 degrees F for about 35 to 40 minutes. Check the middle of the brownie with a toothpick or a sharp knife. If the brownie is not quite done, bake for another 5 minutes. Allow the brownies to cool before cutting.
- Here is the ultimate cutting trick for any brownies. Always, always, ALWAYS use a plastic (disposable) knife. They will cut absolutely perfect every time whether they are completely cool or just slightly warm. DIG IN you will be glad you did.
