Ingredients

  • 2 c. sour cream
  • 1/2 c. sugar
  • dash of salt
  • 1 diced banana
  • 1/4 c. chopped pecans
  • 1 can Bing cherries
  • 1 (8 oz.) can crushed pineapple, drained
  • red food coloring

Instructions

  1. Combine sour cream, sugar, salt, drained pineapple, and enough red food coloring to achieve a pretty pink color in a mixing bowl.
  2. Gently fold in chopped pecans, Bing cherries, and diced banana until evenly distributed.
  3. Line cupcake papers in cupcake tins to prepare for serving.
  4. Spoon the salad into the cupcake cups and freeze until firm before serving.
