Ingredients

  • 4 (15 oz.) cans black beans, rinsed and drained
  • 3 cups mild salsa
  • 1 (11 oz.) can vacuum packed corn kernels, drained
  • 1 (12 oz.) package corn muffins
  • 1 cup grated jalapeno Jack cheese

Instructions

  1. Preheat oven to 425°F.
  2. In a 4-quart saucepan over high heat, cook the black beans, salsa, and corn for 6 to 7 minutes, stirring frequently until hot.
  3. Meanwhile, arrange the corn muffins on an ungreased cookie sheet and heat in the oven for 5 to 8 minutes.
  4. Remove the bean mixture from heat.
  5. Stir in 3/4 cup grated jalapeno Jack cheese until melted.
  6. Remove muffins from the oven and sprinkle with remaining cheese, if desired.
  7. Serve the chili sprinkled with remaining cheese and accompanied by hot muffins.
