Ingredients

  • 5 eggs
  • 2 Tbsp. butter, melted
  • 1/4 c. flour
  • 1/2 tsp. baking powder
  • 1 (8 oz.) carton cottage cheese
  • 2 c. shredded Monterey Jack cheese
  • 1 (4 oz.) can chopped green chiles, drained
  • 1 tomato

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix well the eggs, melted butter, flour, and baking powder.
  3. Combine cottage cheese, shredded Monterey Jack cheese, and drained green chiles; add to the egg mixture.
  4. Pour the mixture into a well-greased quiche pan.
  5. Bake for 10 minutes.
  6. Slice the tomato and place on top of the dish.
  7. Bake at 350°F (175°C) for an additional 25 minutes.
  8. Serve with sour cream and salsa.
