Ingredients

  • 15 oz. can black beans, drained and rinsed
  • 1 small green pepper, cut in bite-size strips
  • 1 small carrot, coarsely shredded
  • 1 Tbsp. chopped red onion
  • lettuce leaves (optional)
  • 1/2 tsp. salt
  • 2 Tbsp. vegetable oil
  • 1/4 tsp. shredded lime peel
  • 2 Tbsp. lime juice
  • 1/8 tsp. ground cumin

Instructions

  1. Drain and rinse the black beans.
  2. Combine the black beans, green pepper strips, shredded carrot, and chopped red onion in a bowl.
  3. In a small bowl, whisk together lime juice, vegetable oil, shredded lime peel, salt, and ground cumin.
  4. Pour the dressing over the bean mixture and toss to combine.
