Ingredients

  • 8 oz. cream cheese
  • 1 egg
  • 1 1/3 cups sugar
  • 5/8 teaspoon salt
  • 6 oz. chocolate bits
  • 1 1/2 cups flour
  • 1/4 cup cocoa
  • 1 teaspoon baking soda
  • 1 cup water
  • 1/3 cup vegetable oil
  • 1 tablespoon vinegar
  • 1 teaspoon vanilla

Instructions

  1. Combine cream cheese, beaten egg, 1/3 cup sugar, and 1/8 teaspoon salt.
  2. Beat well until smooth.
  3. Stir in chocolate bits.
  4. Set aside the cream cheese mixture.
  5. Sift together 1 1/2 cups flour, 1 cup sugar, cocoa, baking soda, and 1/2 teaspoon salt.
  6. Add water, vegetable oil, vinegar, and vanilla to the flour mixture.
  7. Beat well until smooth.
  8. Fill small cupcake liners placed in a muffin tin halfway with the flour mixture.
  9. Drop approximately 3/4 teaspoon of cream cheese mixture on top of each cupcake.
  10. Bake in a preheated 350°F oven for 20 to 25 minutes.
