Ingredients

  • 1 1/2 lb. firm fleshed fish fillets
  • 1/4 cup flour
  • 3 tablespoons butter
  • 3 tablespoons cooking oil
  • 1 tablespoon blackened fish seasoning
  • parsley sprigs

Instructions

  1. Dust the fish fillets with flour.
  2. Heat the butter and cooking oil in a large, heavy pan over medium heat.
  3. Add the fillets and cook for 3 minutes on one side.
  4. Turn the fillets over and sprinkle the blackened fish seasoning evenly over the browned side.
  5. Cook for another 3 minutes, then turn the fillets again, sprinkling this side with the seasoning.
  6. Increase the heat to high and sear each side of the fillets for about 2 minutes.
  7. Garnish with parsley sprigs and serve immediately.
