Ingredients

  • 1/2 cup shortening
  • 1/2 cup sugar
  • 1/8 teaspoon salt
  • 4 egg yolks
  • 1 teaspoon vanilla
  • 3 tablespoons milk
  • 1 cup sifted cake flour
  • 1 teaspoon baking powder
  • 6 egg whites
  • 3/4 cup sugar
  • 1 tablespoon sugar

Instructions

  1. Cream the shortening; beat in sugar and salt.
  2. Add beaten egg yolks, vanilla, milk, and sifted cake flour with baking powder to the mixture.
  3. Spread the batter in two greased 9-inch round layer cake pans; this will barely cover the bottom of the pans.
  4. Beat egg whites until very light; gradually add 3/4 cup sugar and continue beating until stiff peaks form.
  5. Spread the meringue over the batter in both pans. Sprinkle with additional sugar and cinnamon.
  6. Sprinkle almonds on top of the meringue.
  7. Bake in a 350°F oven for about 30 minutes.
  8. Let the cakes cool completely.
  9. Assemble the cake with cream filling.
