Ingredients

  • 1 1/4 cups flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 1 1/2 cups all-bran cereal
  • 1 1/4 cups milk
  • 2 tablespoons vegetable oil
  • 1 egg
  • 1 1/2 cups blueberries

Instructions

  1. Sift together the flour, baking powder, salt, and sugar. Set aside.
  2. Mix the milk and all-bran cereal together and let stand for a few minutes.
  3. Add the egg and vegetable oil to the cereal mixture and mix well.
  4. Add the flour mixture to the wet ingredients only until moistened.

  6. Pour the batter into greased muffin tins.
  7. Bake at 400°F (200°C) for 18 to 20 minutes.
