Ingredients

  • 16 oz. French bread loaf, cubed
  • 8 oz. pkg. cream cheese, cut in cubes
  • 3 c. fresh or frozen blueberries, divided
  • 6 large eggs
  • 4 c. milk
  • 1/2 c. sugar
  • 1/4 c. margarine, melted
  • 1/4 c. maple syrup
  • 10 oz. jar blueberry preserves

Instructions

  1. Arrange half of the bread cubes in a lightly greased 13 x 9-inch pan.
  2. Sprinkle evenly with cream cheese and 1 cup blueberries.
  3. Top with the remaining bread cubes.
  4. Whisk together eggs, milk, sugar, melted margarine, and maple syrup.
  5. Pour the egg mixture over the bread cubes, pressing them to absorb the liquid.
  6. Cover and chill in the refrigerator for 8 hours.
  7. Preheat the oven to 350°F (175°C).
  8. Bake the covered dish for 30 minutes.
  9. Uncover and bake for an additional 30 minutes or until lightly brown and set.
  10. Let stand for 5 minutes before serving.
  11. In a saucepan over low heat, stir together the remaining 2 cups blueberries and blueberry preserves until warm.
  12. Serve the warm blueberry mixture over the bread pudding.
