Ingredients

  • 3 Tbsp. shortening
  • 3 Tbsp. butter or margarine
  • 1 cup granulated sugar
  • 1 Tbsp. grated lemon peel
  • 2 eggs
  • 1 Tbsp. fresh lemon juice
  • 1 1/2 cups all-purpose flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup milk

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large bowl, cream together shortening, butter, sugar, and lemon peel.
  3. Add eggs and lemon juice, mixing well.
  4. In a separate bowl, sift together flour, baking powder, and salt.
  5. Gradually blend the dry ingredients into the creamed mixture, alternating with milk.
  6. Toss blueberries with 2 tablespoons of flour.
  7. Gently fold the blueberries into the batter.
  8. Pour the batter into a greased and floured 9 x 5 x 3 inch loaf pan.
  9. Bake for 50 to 55 minutes, testing for doneness with a toothpick.
  10. Remove from the pan and cool on a wire rack.
