Ingredients

  • 8 oz. cream cheese
  • 1 egg
  • 1/3 cup sugar
  • 1/8 teaspoon salt
  • 6 oz. chocolate bits
  • 1 cup chopped pecans
  • 1 1/2 cups flour
  • 1 cup sugar
  • 1/4 cup cocoa
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1 cup water
  • 1/3 cup Wesson oil

Instructions

  1. Cream together the cream cheese, beaten egg, sugar, and salt until smooth.
  2. Add chocolate bits and chopped pecans to the cream cheese mixture and set aside.
  3. In a separate bowl, combine flour, sugar, cocoa, baking soda, and salt.
  4. Add water, oil, vinegar, and vanilla to the dry ingredients and mix well.
  5. Line a medium-sized muffin pan with paper baking cups.
  6. Fill each cup one-third full with the chocolate batter.
  7. Drop spoonfuls of the cream cheese mixture on top of the chocolate batter in each cup.
  8. Bake at 350°F (175°C) for 25 minutes until set and cooked through.
