Blueberry Mint Salad

Ingredients

  • 1 head Romaine Lettuce, Chopped
  • 2 cups Blueberries
  • 2 cups Mint, Torn
  • 3 Scallions, Thinly Sliced
  • 2 cups Cucumbers, Peeled And Chopped
  • 1/2 cups Balsamic Vinegar
  • 1 Tablespoon Honey
  • 1 Tablespoon Olive Oil
  • Salt And Pepper

Instructions

  1. In a big mixing bowl combine the lettuce, blueberries, mint, scallion, and cucumbers.
  2. In a small dish make the dressing by beating together the vinegar, honey, olive oil, salt and pepper.
  3. Pour the dressing over the salad, toss, and serve!
