Blueberry Mint Salad

- In a big mixing bowl combine the lettuce, blueberries, mint, scallion, and cucumbers.
- In a small dish make the dressing by beating together the vinegar, honey, olive oil, salt and pepper.
- Pour the dressing over the salad, toss, and serve!
