Ingredients

  • 4 cups fresh blueberries
  • 5 egg yolks
  • 1 cup sugar
  • 2 cups whole milk
  • 3 envelopes plain gelatin
  • 1 pint heavy cream, whipped

Instructions

  1. Wash blueberries and pat dry.
  2. Put blueberries in a blender and puree.
  3. Reserve a few berries to use as garnish.
  4. Dissolve gelatin in water according to package directions.
  5. Beat egg yolks with sugar in a medium saucepan.
  6. Bring milk to a boil in another medium saucepan.
  7. Remove milk from heat and pour into egg mixture, stirring constantly.
  8. Return egg-milk mixture to heat and cook until thickened, stirring constantly (do not boil).
  9. Stir gelatin and pureed berries into the hot mixture and let cool.
  10. When mixture begins to set, fold in whipped cream.
  11. Toss a few reserved berries into the mold, then add the mixture.
  12. Garnish top with a few more berries.
  13. Refrigerate for 3 to 4 hours before serving.
