Ingredients

  • 2 eggs
  • 1 cup sugar
  • 1 cup milk
  • 3 tablespoons margarine or oil
  • 3 cups sifted flour
  • 3/4 teaspoon salt
  • 4 teaspoons baking powder
  • 1 cup blueberries
  • 3/4 cup broken nut meats
  • 1 teaspoon vanilla

Instructions

  1. Beat eggs; add sugar and beat until fluffy.
  2. Stir in milk and melted margarine or oil.
  3. Mix and sift flour, baking powder, and salt; add to egg mixture with vanilla.
  4. Fold in blueberries and broken nut meats.
  5. Pour batter into a greased bread pan.
  6. Bake at 350°F (175°C) for 1 hour or until the bread tests done.
  7. Remove from oven and cool on a rack for 20 minutes.
  8. Remove bread from pan and allow to cool completely.
  9. For best slicing, let the bread set overnight.
