Ingredients

  • 2 c. all-purpose flour
  • 1 c. quick cooking oats
  • 1/2 c. sugar
  • 1/2 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/4 c. plus 2 Tbsp. margarine, softened
  • 2 eggs
  • 1/4 c. light corn syrup
  • 1 c. fresh blueberries

Instructions

  1. Combine flour, quick cooking oats, sugar, baking powder, salt, and ground cinnamon in a large mixing bowl.
  2. Cut in softened margarine with a pastry cutter until the mixture resembles coarse meal.
  3. In a separate bowl, mix eggs, light corn syrup, and milk until well combined.
  4. Add the wet ingredients to the dry ingredients, stirring just until moistened.
  5. Fold in fresh blueberries gently.
  6. Pour the batter into a greased and floured 9 x 5 x 3-inch loaf pan.
  7. Bake at 350°F (175°C) for 1 hour and 10 minutes, or until a wooden pick inserted in the center comes out clean.
  8. Cool the loaf in the pan for 10 minutes.
  9. Remove from the pan and cool completely on a wire rack.
