Ingredients

  • 2 c. fresh blueberries
  • 3 c. self-rising flour
  • 3 eggs
  • 2 Tbsp. oil
  • 2 Tbsp. sugar
  • 2 c. milk

Instructions

  1. Wash and remove stems from the blueberries; drain well and set aside.
  2. Sift the flour and sugar together in a bowl.
  3. In another bowl, combine the eggs, milk, and oil.
  4. Gradually add the wet ingredients to the dry ingredients, stirring only until the mixture is just coated with batter.
  5. Pour the batter onto a hot, lightly greased griddle.
  6. Cook until the surface is covered with bubbles.
  7. Turn the pancakes and cook until the bottom is brown.
