Ingredients

  • 2 qt. rhubarb, chopped
  • 1 cup raisins
  • 1 cup sugar
  • 1 cup flour
  • 1/3 cup sugar
  • 2 tsp. baking powder
  • 2 Tbsp. shortening
  • 1 egg
  • 1/3 cup milk

Instructions

  1. Mix rhubarb, raisins, and sugar; place in an oblong 12 x 8-inch pan.
  2. Cream shortening and sugar; add egg; beat well.
  3. Add dry ingredients alternately with milk and vanilla to the creamed mixture.
  4. Pour the batter over the rhubarb mixture.
  5. Bake for 1 hour at 350°F.
