Ingredients

  • 8 boar cutlets
  • salt
  • pepper
  • flour
  • vegetable oil
  • 1/2 cup white wine
  • 1 cup beef broth
  • 1 tablespoon mustard

Instructions

  1. Season the boar cutlets with salt and pepper.
  2. Dredge the cutlets in flour and brown them in vegetable oil.
  3. Remove the meat from the pan and add some flour to the drippings.
  4. Stir while heating until brown, then add the white wine and beef broth. Bring to a boil and stir in the mustard.
  5. Return the cutlets to the pan and cook over low heat until tender.
  6. When nearly done, stir in the sour cream and cook for 1 to 2 minutes longer.
