Ingredients

  • 1 lb. butter
  • 2 c. sugar
  • 6 beaten eggs
  • 1 (2 oz.) bottle lemon extract
  • 4 c. sifted flour
  • 1/2 tsp. salt
  • 1 lb. white raisins
  • 4 c. shelled pecans
  • 1 tsp. baking powder

Instructions

  1. Soften butter and cream sugar together, then add beaten eggs and lemon extract, mixing thoroughly.
  2. Sift dry ingredients together, then add half to the butter mixture and blend.
  3. Add raisins and pecans to the remaining dry ingredients separately.
  4. Combine all mixture and mix well.
  5. Pour into a greased tube pan.
  6. Place on the top shelf of the oven and add a pie pan of water on the lower shelf.
  7. Bake at 300°F (150°C) for 2 hours.
